Rather reductive in fact. A slight hint of alcohol, but overall an impression of latent power, even some slightly black fruit, without losing all Volnay character. Tasting Notes
- Appearance: Deep ruby with a slight garnet rim.
- Nose: Concentrated and focused, displaying aromas of black cherry, plum skin, and dark raspberry, with tertiary notes of turned earth, forest floor, and subtle spice from the oak aging.
- Palate: Dry and medium-plus in body. The concentration of the 2019 vintage is evident in the mid-palate, which feels dense and layered. The tannins are prominent and firm, providing the structure that defines this vineyard. The finish is long and dry, showing classic Volnay minerality.
Serving Suggestion
- Temperature: Serve at 16–17°C. A slightly warmer serving temperature allows the dense structure and aromatic complexity to breathe.
- Decanting: This wine benefits from significant aeration. Decanting 1 to 2 hours in advance will help soften the firm tannins and allow the deeper, earthy aromatics to emerge. This has the structure to age well through 2035–2040.
- Western Pairing: Braised beef short ribs, roasted leg of lamb, game birds, or aged hard cheeses like Comté.
