Terroir & Winemaking Reality
- The Majestic "Dog's Teeth" Terroir: "Dents de Chien" (meaning *dog's teeth*) is widely celebrated as the absolute finest premier cru site in Saint-Aubin. Its location is legendary: it sits high on the south-facing slope directly overlooking the Grand Cru hill, sharing an immediate border with *Chevalier-Montrachet*. The soil here is incredibly thin, rocky, and packed with jagged white limestone chunks. This demanding terroir forces the old Chardonnay vines to struggle, yield tiny crops, and produce a white wine defined by a striking, crystalline minerality and power that mimics its elite neighbors.
- Olivier Leflaive's Haute Couture Elevage: Under the precise guidance of Franck Grux and the technical team at Olivier Leflaive, this small-batch cuvée is crafted with absolute precision. The fruit is handpicked in the cool early morning and gently pressed before undergoing fermentation in French oak barrels. The wine is then aged for up to 12 months with careful fine lees management, beautifully softening the high limestone acidity and building a silky, rounded mid-palate without ever masking the intense flinty drive of the site.
Highlights
- 100% Chardonnay harvested from the legendary, limestone-laden Dents de Chien premier cru vineyard.
- An absolute insider’s bottle that borders Chevalier-Montrachet, offering Grand Cru tension at a fraction of the cost.
- A spectacular 2023 expression that beautifully channels the natural volume of the season through a chiseled, precise lens.
Tasting Notes
- Appearance: Brilliant, luminous straw-gold core with pale, shimmering platinum flashes.
- Nose: Aristocratic, deep, and beautifully chiseled. It opens with an intense array of fresh nectarine, lemon peel, and white peach, anchored beneath by sophisticated notes of crushed gravel, smoky flint reduction, and white field flowers.
- Palate: Bone-dry, medium-to-full-bodied, and outstandingly linear. The attack brings a concentrated core of citrus fruit oils and green apple before a massive wave of chalky, wet-stone acidity cuts cleanly through the center. It effortlessly balances the rich fruit weight of the 2023 vintage, driving into a highly persistent, mouth-watering, and intensely salty mineral finish.
Serving Suggestion
- Temperature: Serve slightly cool at 11–13°C. Do not serve it ice-cold; a gentle chill is vital to allow the deep limestone structure, fine oak spices, and ripe orchard fruit layers to breathe and expand properly.
- Decanting: A 30-to-45 minute decant is highly recommended if opening young. The serious mineral core and tight-knit reduction benefit immensely from air to unlock their full complexity. Built to cellar gracefully over the next 8 to 12+ years.
- Western Pairing: Pan-seared sea bass with lemon-butter sauce, butter-poached lobster tails, roasted chicken breast in a light cream reduction, or seared scallops.
- Asian Pairing: Steamed scallops with garlic and glass noodles, wok-fried crystal shrimp dumplings (蝦餃), or traditional Cantonese roasted goose.
