Hand-harvested from mature, low-yielding ungrafted Riesling vines (planted 1980s-1990s) on the estate's Polish Hill River vineyards, featuring black slate over clay subsoils at 450-500m elevation with cool nights for acidity retention. Whole-bunch pressed, wild-fermented in stainless steel at low temperatures, no malolactic, rested on lees until early bottling under screwcap at ~12% alcohol, pH 3.0, TA 8.5 g/L, reflecting Pikes' minimalist approach emphasizing site transparency.
Tasting Notes
Pale straw-green; intense lifted aromas of lime cordial, Granny Smith apple, talc powder, lemon pith, wet slate, and herbal bath salts. Bone-dry palate with searing acidity, green apple core, lime sherbet, fine talc texture, and classic Polish Hill River mineral persistence building to a chalky, mouthwatering finish.
