Scarbolo, a third-generation family estate in Lauzacco near the Slovenian border, farms sustainable vineyards across Friuli's diverse Grave terroir of alluvial gravel and sand that impart intensity and minerality to whites. The 2021 Sauvignon reflects Friuli's cool-climate excellence, with Sauvignon Blanc thriving on these fast-draining soils to yield concentrated aromatics and structure.​

Grapes undergo temperature-controlled fermentation in stainless steel to preserve primary fruit and herbaceous character, followed by brief lees contact for texture without oak influence, resulting in a pure, site-transparent expression of Friuli Sauvignon.​
