GEOLOGY
The grapes come from plots located in the regional appellation area of the Côte de Beaune. Soil: Clay and limestone. 100% Chardonnay - Guyot with different annual work of the vine (pruning, training, leaf stripping).

VINIFICATION
the grapes are harvested by hand and sorted on the vine. They are lightly pressed in a pneumatic press at low pressure to obtain a slow extraction.

AGING
After a light settling, the wine is placed in French oak barrels of 500 liters (10% new barrels) for the two alcoholic and malolactic fermentations with natural yeasts for 11 months. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending. The wine is finally fined and lightly filtered before bottling according to the lunar calendar ("fruit" day).
