The vines are located near the village of Chassagne Montrachet, south of the Côte de Beaune, Burgundy. The grapes come from the "Les Chaumes" plot for this "Vieilles Vignes" cuvée.  Rich, round and powerful wine. Notes of toasted almonds, ripe apple, white flowers (especially acacia). A long and remarkable persistence.

GEOLOGY
The vines are located near the village of Chassagne Montrachet, south of the Côte de Beaune, Burgundy. The grapes come from the "Les Chaumes" plot for this "Vieilles Vignes" cuvée. Soil: clay-limestone. The slope is very low. South-East exposure. 100% Chardonnay - Guyot with different seasonal processes in the vineyard (pruning, wire trellising / knotting, leaf stripping)
VINIFICATION
The grapes are harvested by hand and sorted during the picking. They are lightly pressed in a pneumatic press in order to obtain a slow extraction. After a gentle settling, the wine is put in French oak barrels of 228 liters (15% new barrels) for the two fermentations (alcoholic and malolactic) with natural yeasts for 14 months.
AGING
Aging on fine lees. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for assembly. The wine is finally fined and lightly filtered before bottling according to the lunar calendar ("fruit" day).
TASTING
Rich, round and powerful wine. Notes of toasted almonds, ripe apple, white flowers (especially acacia). A long and remarkable persistence.
