The grapes come from the vineyards of the village of Volnay in the Côte de Beaune and more particularly from "Lurets" and "Gigottes". They are located at the bottom of the village of Volnay.  Volnay combines nobility, elegance and femininity. A delicate scent of violets and ripe grapes. One of the best representatives of the Côte de Beaune. The Volnay is to the Côte de Beaune what the Chambolle Musigny is to the Côte de Nuits. A feminine wine that is one of the few Bourgogne Pinot Noirs that you can enjoy in its youth.

GEOLOGY
The grapes come from the vineyards of the village of Volnay in the Côte de Beaune and more particularly from "Lurets" and "Gigottes". They are located at the bottom of the village of Volnay. Soil: clay and limestone. Gentle slope. Grape variety: Pinot Noir. Guyot pruning and various green work (disbudding, trellising, topping and green harvesting) are carried out during the year.
VINIFICATION
Manual harvest. The grapes are sorted twice (during picking and on the sorting table), then partially destemmed (a third sorting can be done if necessary with our optical sorter). They are then placed in thermo-regulated stainless steel tanks. Alcoholic fermentation can begin with yeasts naturally present in the berries and will last around 3 weeks. Light pumping over to obtain the purest wine and the most representative of the appellation. Soft pressing.
MATURING
The wine is put in French oak barrels (15% new barrels) following a light cold settling. Malolactic fermentation can begin. The aging lasts 14 months on fine lees. We follow the lunar calendar ("fruit" day) for bottling without fining or prior filtration.
TASTING
Volnay combines nobility, elegance and femininity. A delicate scent of violets and ripe grapes. One of the best representatives of the Côte de Beaune. The Volnay is to the Côte de Beaune what the Chambolle Musigny is to the Côte de Nuits. A feminine wine that is one of the few Bourgogne Pinot Noirs that you can enjoy in its youth.
