The vines are located around the village of Meursault in the south of the Côte de Beaune.  Intoxicating bouquet of dried almonds, a hint of mineral. Once the wine is opened, we have nice notes of white flowers, butter and toast. Its mineral structure brings purity and freshness.

GEOLOGY
The vines are located around the village of Meursault in the south of the Côte de Beaune. Origin of the plots: “Rougeots”, “Chevalières” and “Tessons”. Soil: chalk and clay. The slope is quite steep. 100% Chardonnay - Guyot with different seasonal processes in the vineyard (pruning, wire trellising / knotting, leaf stripping).
VINIFICATION
The grapes are harvested by hand and sorted during the picking. They are lightly pressed in a pneumatic press to obtain a slow extraction. After a gentle settling, the wine is placed in 228-liter French oak barrels (15% new barrels) for the two fermentations (alcoholic and malolactic) with natural yeasts and bacteria for 14 months.
AGING
Aging on fine lees. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for assembly. The wine is finally fined and lightly filtered before bottling according to the lunar calendar ("fruit" day).
TASTING
Intoxicating bouquet of dried almonds, a hint of mineral. Once the wine is opened, we have nice notes of white flowers, butter and toast. Its mineral structure brings purity and freshness.
