The vines are located in the commune of Puligny-Montrachet, in the south of the Côte de Beaune.  Powerful wine with mineral notes and well-integrated acidity. The most mineral wine among the white "villages" of the Côte de Beaune.

GEOLOGY
The vines are located in the commune of Puligny-Montrachet, in the south of the Côte de Beaune. The Puligny Montrachet is where you can find the most famous Grands Crus vineyards (Bienvenues-Bâtard Montrachet, Bâtard Montrachet, Chevalier Montrachet and Montrachet). Soil: clay-limestone. The subsoil is made up of different layers of limestone (pebbles, marly soils). The slope is very low. 100% Chardonnay - Guyot with different annual work of the vine (pruning, trellising on wire / knotting, stripping).
VINIFICATION
The grapes are harvested by hand and sorted during the picking. The grapes are pressed in a pneumatic press at low pressure to obtain a slow extraction. After cold settling, the wine is placed in French oak barrels (15% new barrels). The alcoholic and malolactic fermentations can then begin with natural yeasts.
AGING
Aged on fine lees for 14 months. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for assembly. The wine is finally fined and lightly filtered before bottling following the lunar calendar ("fruit" day to obtain a wine with freshness and minerality).
TASTING
Powerful wine with mineral notes and well-integrated acidity. The most mineral wine among the white "villages" of the Côte de Beaune.
MEALS
Fish, shellfish or white meats accompanied by a cream sauce.
