From old vines of an average age of 45 years old. The vineyard is located in the area of Savigny Les Beaune appellation in the village of the same name.Wine mostly rich aromatically with mostly floral and fruity notes and very much freshness in mouth.

GEOLOGY
The vineyard is located in the appellation air of Savigny-lès-Beaune. The grapes come mainly from the "Les Vermots Dessus" plot. The vineyard is in the valley where the wind is present and the temperatures colder, which gives a later maturity of the grapes. Soil: The subsoil is made up of very hard limestone gravel (poor soils) giving minerality to the wine. 100% Chardonnay - Guyot with different annual work of the vine (pruning, trellising on wire / knotting, stripping).
VINIFICATION
The grapes are harvested by hand and sorted during picking. They are pressed in a pneumatic press at low pressure to obtain a slow extraction. After cold settling, the wine is put into French oak barrels (20% new) of 500 liters and not 228 liters in order to avoid too much exchange between the wood and the wine. Fermentations (alcoholic and malolactic) can then begin with natural yeasts.
AGING
On fine lees for 12 months. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for assembly. The wine is finally fined and lightly filtered before bottling following the lunar calendar ("fruit" day to obtain a wine with freshness and minerality).
TASTING
NOTES Aromatically rich wine with floral and fruity notes and a lot of freshness on the palate.
