From Domaine William Fèvre in Burgundy’s Chablis appellation, the Chablis 1er Cru Beauroy 2021 is a refined 100% Chardonnay from a 1.12-hectare plot across three parcels in the Beauroy Premier Cru vineyard, situated on south-facing slopes of Kimmeridgian limestone soils that impart exceptional minerality and structure. Hand-harvested grapes undergo gentle pneumatic pressing, with 40-50% fermented in stainless steel tanks and the remainder in used French oak barrels for subtle enhancement; the wine matures on fine lees for 10-15 months, blending tank and oak components to balance freshness and depth. Certified organic since 2023, this production emphasizes terroir expression and minimal intervention, yielding a pale gold wine with remarkable purity and vibrancy.

Tasting Notes An elegant, mineral-driven white with crisp citrus and subtle floral notes, reflecting Chablis's Kimmeridgian terroir.
