Sourced from Domaine William Fèvre's 3.8ha across Butteaux (for density), Forêts (for finesse), and Montmains proper (for richness) on Kimmeridgian limestone soils in Chablis' left-bank sector. Hand-harvested Chardonnay undergoes direct pressing, with partial fermentation in neutral French oak (average age 6+ years) and stainless steel; aged 12 months on fine lees to build texture while preserving purity through organic practices and HVE3 certification. Bottled at 13% alcohol, emphasizing climats expression.
Tasting Notes
Light lemon-green hue with primal aromatics of grapefruit, green apple, ripe lemon oil, white flowers, clam liquor, and wet stones. Medium to full-bodied palate is fine-boned, satiny, and precise with pear, citrus confit, floral notes, steely acidity, kimmeridgian minerality, and a bright, saline, refreshing finish showing white peach and honeyed softness.

Serving and Cellaring
Serve at 11-13°C in a Chablis glass after 30-45 minutes decanting; drink from 2025-2035 to integrate oak and reveal complexity. Pairs with oysters, crab, grilled fish, or veal in cream sauce; excellent aging potential from tension and lees texture.
