This wine comes from Domaine William Fèvre, a benchmark Chablis producer with extensive holdings in Premier and Grand Cru vineyards. Vaillons is a Premier Cru climat on the left bank of the Serein, and the 2023 wine is made from 100% Chardonnay. The estate’s approach is deliberately restrained, using gentle handling, natural fermentation, and a period of lees aging partly in stainless steel and partly in French oak to preserve precision while adding subtle breadth.
Tasting Notes
The wine is described as having fruity and floral aromas lifted by freshness and subtle mineral notes. On the palate it is generous, refined, harmonious, and round, while other published notes point to apple, pear, pink grapefruit, sea spray, oyster shell, and a lightly stony, bitter-lemon finish.
Awards and Accolades
Wine Spectator 92 points. Vinous 90–92 points. Wine-Searcher lists an average critic score of 90/100.
Serving and Cellaring
Serve chilled, around standard white Burgundy temperature, to keep the wine’s tension and minerality vivid. It is approachable in youth but also has the structure to improve with several years of cellaring.
