(Wine Advocate Score 92) The 2018 Chablis 1er Cru Vaillons is showing beautifully, mingling notes of white peach and spring blossom with hints of Meyer lemon, crisp green apple and pear. Medium to full-bodied, its satiny attack segues into a tensile, vibrant and nicely concentrated mid-palate, concluding with a saline finish.

Vaillons is one of the largest Premier Cru vineyards in Chablis. It is located on the western side of the Serein river. Wines from Vaillons vineyard tend to be floral and more delicate than those from the other side of the river, but still retain Chablis' characteristic intense minerality.

VINIFICATION: Use of the principle of gravity to avoid any pumping that could be detrimental to the quality of the wine. Short-term pneumatic pressing (1h30 to 2h00) for a delicate separation between the solid and liquid parts of the grapes. Very light static settling in order to keep enough fine lees for the alcoholic and malolactic fermentations can unfold naturally. Putting the musts in French oak barrels (aged in average of 6 years) for 40 to 50% of the cuvée. The remainder is vinified in small stainless steel vats.

AGING: 13 to 14 months including 5 to 6 months on fine lees in French oak barrels for 40 to 50% of the cuvée. The aging ends in small stainless steel vats.
