History
Domaine Paul Pillot traces its roots to 1900 in Chassagne-Montrachet, Cote de Beaune, Burgundy, when barrel-maker Jean-Baptiste Pillot shifted fully to viticulture; his sons Alphonse and Henri expanded holdings post-World War I and began estate-bottling. Paul Pillot took charge in 1968, acquiring prized Premier Cru sites like Clos Saint Jean, Les Grandes Ruchottes, Les Caillerets, and Saint-Aubin 1er Cru Les Charmois, growing the domaine to 13 hectares mostly Chardonnay. Today, fourth-generation Thierry Pillot leads since 2004, refining quality through vineyard focus and launching a micro-négociant line, with sister Chrystelle assisting.
Viticulture Philosophy
Thierry Pillot farms organically without certification, prioritizing vine health via hand-work in Premier and Grand Cru plots, high training for photosynthesis, and selective de-leafing for aeration while shielding from sun. Sites in Chassagne-Montrachet, Puligny-Montrachet, Saint-Aubin, and a tiny Bienvenues-Bâtard-Montrachet emphasize terroir purity across old vines.
Winemaking Techniques
Non-interventionist cellar work features whole-cluster pressing for whites, extended élevage (18 months on lees in 10-30% new oak or large 350-500L barrels), then tank resting before unfined bottling; reds follow similar minimalism.
