Chiseled, Grand Cru-Level Power, and Crystalline

Universally regarded as one of the absolute finest Premier Crus in all of Chablis, the 2023 Domaine Billaud-Simon Mont de Milieu rivals the weight and majesty of a Grand Cru. Basking on a perfectly sun-drenched, south-facing right-bank slope, this iconic cuvée effortlessly bridges intense solar concentration with laser-focused limestone purity. It greets the nose with a brilliantly complex aroma of white peach, candied citrus rind, and crushed flint. Powerfully built yet remarkably light on its feet, it coats the palate in a rich, dense layer of yellow orchard fruits before a sweeping tide of chiseled, mouth-watering salinity takes over, delivering a finish of immense precision and longevity.

Terroir, History & Acclaim

Critical Recognition:
Burghound [90-93] pts
Jasper Morris [92-94] pts
  • 90-93 Points - Burghound (Allen Meadows): "Here too there is just enough wood influence lurking in the background of the vaguely exotic aromas of white peach, apricot and oyster shell to merit pointing out. There is impressive volume and mid-palate density to the larger-bodied and solidly powerful flavors that are rich to the point of opulence before concluding in a sappy and lingering finish where the only nit is a touch of warmth."
  • 92-94 Points ★★★★★ - Jasper Morris Inside Burgundy: "Mid lemon yellow. A clear pure ripe fruit nose, without the lemon notes. Plenty of flesh here, yet all attractively bound, nothing top heavy. 20% wood fits in very nicely. A classy Mont de Milieu of the less exotic sort. An excellent finish with tension, light salinity, not iodine. Exemplary, thanks perhaps to a yield of 40 hl/ha from old vines. Drink from 2027-2032. Tasted Jul 2024."
  • The Grand Cru Neighbor: Mont de Milieu is situated on the right bank of the Serein river, enjoying the same southeast exposure and deep Kimmeridgian limestone veins as the neighboring Grand Cru hill. This unique topography grants the grapes unparalleled solar warmth during the day while cold night airlocks in a dense, monumental, and famously saline structural core.
  • Laser-Like Purity: Under the meticulous engineering of winemaker Olivier Bailly and the Faiveley technical team, this Mont de Milieu remains completely unsaddled by heavy wood. Fermented almost entirely in temperature-controlled stainless steel tanks, it preserves the absolute, unadulterated energy, iodine freshness, and rocky minerality of the site.

Highlights

  • 100% Chardonnay harvested from the domain's highly prized right-bank parcels in the legendary Mont de Milieu Premier Cru.
  • Consistently regarded as a "Grand Cru in disguise," offering profound power, rich body, and majestic aging capacity.
  • Vinified meticulously in stainless steel to protect the classic Chablisian attributes of oyster shell, mineral reduction, and salt.

Tasting Notes

  • Appearance: Bright straw-yellow core with shimmering white-gold and emerald reflections.
  • Nose: Extremely detailed, complex, and maritime. It opens with intense aromatics of mineral reduction, iodine, candied lemon rind, and freshly shucked oyster shell, effortlessly merging into deeper notes of white peach and a hint of sweet baking spice.
  • Palate: Bone-dry, large-bodied, and spectacularly powerful. The mid-palate possesses exceptional density and a highly attractive, velvety fruit texture loaded with white orchard fruits and apricot flesh. This volume is instantly chiseled by a towering, electric spine of acidity that drives into an explosive, deeply saline, and youthfully austere finish.

Serving Suggestion

  • Temperature: Serve slightly cool at 11–13°C. Allowing the wine to sit just above refrigerator temperature allows the massive density and subtle fruit layers to expand fully.
  • Decanting: A 30-to-45 minute decant is strongly recommended if drinking young. The tight, monumental nature of Mont de Milieu opens beautifully with air, and it possesses a legendary structure built to evolve effortlessly in the cellar through 2038+.
  • Western Pairing: Butter-poached lobster tails, roasted turbot with cream sauce, grilled langoustines, or premium pan-seared veal medallions.
  • Asian Pairing: Premium steamed garoupa with ginger and superior soy sauce (清蒸石斑魚), salt-baked prawns, or sautéed lobster with ginger and scallions.
