- Appearance: Bright pale gold with stellar, star-bright clarity and white-green tints.
- Nose: Intensely chiseled, fresh, and high-toned, offering clean aromas of lemon pith, crunchy green apple, and white orchard flowers, layered with fresh bread dough, crushed chalk, and an elegant trace of smoky matchstick reduction.
- Palate: Bone-dry, medium-bodied, and remarkably vertical. Pure flavors of pear and citrus oil hit the tongue instantly, driven by an electric, tangy vein of integrated natural acidity. The mid-palate reveals a magnificent, waxy extract density that grounds the wine before sailing into an incredibly long, saline, and oyster-shell mineral finish.
Serving Suggestion
- Temperature: Serve slightly chilled at 11–13°C. Avoid serving it too cold, which fully locks up its complex leesy layers and structural limestone minerals.
- Decanting: A brief 20-to-30 minute decant or pulling the cork an hour ahead of time allows the reductive gunflint complexity to integrate beautifully. Can age over the next 8–12 years.
- Western Pairing: Pan-seared sea bass with lemon-caper butter, roasted chicken with wild thyme, or grilled lobster tails.
- Asian Pairing: 潮州凍蟹 (Chiu Chow Cold Crab), 蒜蓉粉絲蒸大扇貝 (Steamed Scallops with Garlic and Glass Noodles), or light Hamachi sashimi.
