Critical Recognition:
Burghound [89] pts
Jasper Morris [89] pts
- 89 Points Outstanding - Burghound (Allen Meadows): "A ripe mix of Granny Smith apple, lemon rind and tidal pool nuances is attractively fresh and bright. There is good volume and mid-palate concentration to the more attractively textured medium-bodied flavors that possess an enveloping mouthfeel, all wrapped in a nicely long if not especially dry finale. Fine quality for its level and worth a look."
- 89 Points ★★★★☆ - Jasper Morris Inside Burgundy: "Pale colour, a mix of quite deep orchard fruit with some kimmeridgian marine notes, maintain this classical approach across the palate with a notably long aftertaste. Lower acidity but still very Chablisian. Drink from 2025-2028. Tasted Jul 2025."
- The Kimmeridgian Mosaic: This village Chablis is blended from multiple estate parcels spread across the northern slopes of the region. Rooted in ancient Kimmeridgian limestone—a unique soil matrix packed with fossilized prehistoric oyster shells—the vines naturally draw out the intense mineral core and briny sea-spray complexity that defines classic Chablis.
- Stainless Steel Steeliness: Under the modern direction of winemaker Olivier Bailly and the Faiveley technical team, the Chablis AC is treated with absolute purity in mind. Fermented and matured for 9 months entirely in temperature-controlled stainless steel vats on its fine lees, it guarantees an unadulterated, wood-free expression with razor-sharp energy and line.
Highlights
- 100% Chardonnay hand-harvested from prime estate-held village blocks across Chablis.
- Crafted under the elite guidance of the Faiveley team, delivering benchmark right-and-left bank precision.
- 100% stainless steel aging preserves maximum acidity, freshness, and authentic marine minerality.
Tasting Notes
- Appearance: Clear, shimmering pale gold with bright silvery-green flashes.
- Nose: Intensely fresh and coastal. It displays pungent aromas of mineral reduction, crushed chalk, and ocean breeze, opening up to reveal crisp lime zest, white hawthorn petals, and green apple.
- Palate: Bone-dry, medium-bodied, and remarkably energetic. The entry is bright and chiseled, offering a clean, flavor-packed core of Meyer lemon, crunchy white peach, and river stones. Towering, crystalline acidity propels the wine into a beautifully dry, youthfully austere, and deeply saline finish.
Serving Suggestion
- Temperature: Serve well-chilled at 9–11°C. The crisp temperature beautifully heightens the wine's electric acidity and accentuates its refreshing briny qualities.
- Decanting: No decanting necessary. The wine is incredibly vibrant right from the twist or pop of the bottle, though it will comfortably improve over the next 3 to 5 years in your cellar.
- Western Pairing: Freshly shucked raw oysters, chilled shrimp cocktail, pan-seared sole with lemon-caper butter, or fresh goat cheese crostini.
- Asian Pairing: Steamed scallops with garlic and glass noodles (蒜蓉粉絲蒸扇貝), salt-and-pepper calamari, or crystal shrimp dumplings (蝦餃).
