Critical Recognition:
Burghound [92-94] pts
Jasper Morris [91-94] pts
- 92-94 Points Sweet Spot - Burghound (Allen Meadows): "Be aware that Bailly noted that to this point the Bougros had only seen contact with stainless steel though it's possible he may rack it into barrel for a few months before it's bottled. A cool and reserved nose grudgingly offers up a combination of pronounced smoky mineral reduction, quinine and ocean breeze. The powerful, concentrated and muscular big-bodied flavors possess a lovely sense of underlying tension that also suffuses the crisp, very dry and beautifully long finish. This isn't refined, indeed it's borderline rustic but then again, elegance isn't why one buys Bougros."
- 91-94 Points ★★★☆☆ - Jasper Morris Inside Burgundy: The Bougros is made from purchased grapes. All in tank so far but will probably have a spell in barrel, to remove the minor reduction. A luminous lemon and lime colour. Actually, the reduction on the nose is minimal, though there are some interesting grenadine notes on the palate which is otherwise not too exuberant. Citrus zest infuses the back of the palate. Drink from 2028-2034. Tasted Jul 2023.
- The Terrific Bougros Climat: Sitting on the far western edge of the Grand Cru hill, *Bougros* features a steeper gradient and deeper, clay-rich soil pockets over its Kimmeridgian limestone base. This specific geography naturally coaxes out a much broader, heavier, and more powerfully built wine than its neighbors, producing a Grand Cru prized for its density and force.
- Purity in Stainless Steel: Under the direction of cellar master Olivier Bailly and the Faiveley group, this specific small-batch cuvée is raised with a strict focus on pure terroir typicity. Fermented entirely in stainless steel vats to safeguard its deep minerality and tension, it sidesteps standard barrel wood influence to preserve its natural, powerful structural profile.
Highlights
- 100% Chardonnay carefully hand-harvested from prime Grand Cru plots within Chablis.
- Crafted entirely in tank by Olivier Bailly to guarantee unadulterated mineral focus and high-toned tension.
Tasting Notes
- Appearance: Luminous, clear pale lemon-yellow core with brilliant white-gold reflections.
- Nose: Cool, reserved, and classically intense. It opens grudgingly with complex notes of pronounced smoky mineral reduction, quinine, marine ocean breeze, and wet sea shells.
- Palate: Bone-dry, full-bodied, and outstandingly muscular. The entry is powerful and deep, showing superb concentration of citrus zest and subtle grenadine fruits over the mid-palate. A driving, underlying line of stony tension cuts clean through the volume, carrying the structural weight into a highly persistent, crisp, and beautifully long finish.
Serving Suggestion
- Temperature: Serve slightly cool at 11–13°C. Avoid serving it ice-cold, as the immense volume and muscular Grand Cru architecture need a mild chill to expand properly.
- Decanting: A 30-to-45 minute decant is recommended if opening anytime soon to clear the youthful, tight-knit reduction and allow the concentrated stone fruits to open. Built to cellular gracefully through 2038+.
- Western Pairing: Baked lobster tails with garlic butter, grilled turbot, pan-seared scallops, or light veal cutlets in cream sauce.
- Asian Pairing: Steamed prawns with garlic, stir-fried crab with ginger and scallions, or wok-fried lobster medallions.
