- 91-94 Points - Burghound (Allen Meadows): Once again the wood influence is present though not intrusive on the toasty and spicy nose of citrus rind, green fruit and plenty of classic Chablis elements. There is impressive volume to the super-sleek and notably powerful, even muscular, larger-scaled flavors that culminate in a markedly dry but only moderately dry finale. This too possesses fine development potential.
- 90-93 Points ★★★☆☆ - Jasper Morris Inside Burgundy: Just one demi-muid, from purchased fruit. Mid yellow in colour, with the oak evident in the bouquet, but that can work with the Valmur style. It doesn’t take long for the fruit to rise up on the nose. The same juxtaposition between oak and creamy white fruit appears on the palate. This will settle down but best to wait for that to happen. Drink from 2028-2034. Tasted Jul 2024.
- The Unique Valmur Valley: Tucked into a steep valley running through the heart of the Grand Cru hill, *Valmur* benefits from a dramatic climate. Billaud-Simon’s parcels sit in this cool basin, combining south and north-facing slope exposures to lock in electric freshness while forcing 50-year-old vines deep into classic Kimmeridgian limestone soils.
- Careful Cellar Craft: Under the guidance of winemaker Olivier Bailly and the Faiveley group, these old vines are handled with exceptional care. The wine is aged for up to 14 months in a precise split of stainless steel tanks and older, neutral French oak barrels, adding a seamless texture without masking the wine's hallmark oyster-shell precision.

Tasting Notes
- Appearance: Shimmering, bright straw-gold with clear, pale silver-green flashes.
- Nose: Deep, tightly wound, and brilliantly chiseled. It slowly opens with aromas of white flowers, fresh lemon peel, and ripe pear, grounded by intense notes of flinty smoke, sea salt, and iodine.
- Palate: Bone-dry, full-bodied, and beautifully focused. The entry is powerful, coating the tongue in concentrated citrus and stone fruit oils before a massive wave of limestone acidity takes over. It slices cleanly through the solar weight of the vintage, finishing on a long, refreshing, and stony mineral high note.
Serving Suggestion
- Temperature: Serve slightly cool at 11–13°C. Avoid serving it ice-cold; a mild chill is required to let the massive structural layers and dense fruit flavors breathe and expand.
- Decanting: A 1-hour decant is highly recommended if opening young. The serious mineral structure needs plenty of air to fully uncoil. Built to cellar beautifully through 2035+.
- Western Pairing: Butter-poached lobster, roasted veal chops in chanterelle cream, pan-seared turbot, or grilled prawns.
- Asian Pairing: Sautéed lobster with ginger and scallions, wok-fried prawns with salted egg yolk, or delicate steamed abalone.
