Bright, Direct, and Delightfully Refreshing

A beautifully energetic and accessible entry-point to the estate, the 2023 Domaine Billaud-Simon Petit Chablis captures the vibrant, high-spirited personality of the region's higher-elevation plateaus. Cultivated from Portlandian limestone soils, this Chardonnay trades the heavy, dense minerality of the lower valleys for an immediate, mouth-watering crunchiness. The sunny 2023 vintage wraps that racy framework in a lovely core of succulent fruit, revealing generous aromas of fresh lemon, tart green apple, white field flowers, and a subtle marine breeze. Light-to-medium-bodied and intensely clean, it coats the palate with a refreshing citrus snap before finishing on a dry, crisp, and delicate iodized note.

Terroir, History & Acclaim

Critical Recognition:
Burghound [86-89] pts
Jasper Morris [87] pts
  • 86-88 Points - Burghound (Allen Meadows): A fresh, bright and citrusy nose freely offers up its array of green fruit and convincing Chablis elements, in particular quinine. There is both good volume and punch to the delicious middle weight flavors that exude a subtle minerality on the youthfully austere and zest-inflected finish. This is pretty if a bit simple today so a year or two of cellaring should help.
  • 87 Points - Jasper Morris Inside Burgundy: Coming from two plots in Sur Les Clos, the Petit Chablis is currently unracked, on lees, to be bottled in November to make use of VCI. Mid lemon yellow. Rather a delicious nose, ripe citrus perfume with some underlying minerals. A little positive reduction, partly because still sur lie. Good intensity behind, quite trenchant even. Drink from 2025-2026. Tasted Jul 2024.
  • The Portlandian Uplands: Sourced from estate-managed plots sitting on the plateaus above the Grand Cru slopes, these vines are rooted in Portlandian limestone. Richer in calcium carbonate and lighter in clay than the lower-lying Kimmeridgian folds, this specific terroir naturally coaxes out high-toned, lively citrus fruit and a direct, breezy crispness.
  • Stainless Steel Steeliness: Under the meticulous technical management of winemaker Olivier Bailly and the Faiveley group, this Petit Chablis receives an uncompromising, wood-free treatment. Fermented naturally and matured on its fine lees for 9 months entirely in temperature-controlled stainless steel vats, it guarantees a clean, unadulterated focus with maximum freshness.

Highlights

  • 100% Chardonnay carefully hand-harvested from Billaud-Simon's choice plateau-top plots.
  • Pristinely crafted under the elite direction of the Faiveley team to secure crisp, benchmark right-bank precision.
  • Aged 100% in stainless steel vats to lock in immediate fruit vibrancy and a refreshing marine finish.

Tasting Notes

  • Appearance: Bright white-gold color with delicate, shimmering pale green flashes.
  • Nose: Generous, direct, and high-spirited. It bursts open with clean aromas of fresh lemon, grapefruit, and crisp green apple, neatly accented by white hawthorn blossoms and a light, delicate iodized air.
  • Palate: Bone-dry, light-to-medium-bodied, and beautifully lively. The attack is young and high-spirited, offering a juicy mid-palate of citrus peel and crunchy orchard fruits. A racy, precise line of acidity keeps the structure completely energetic, driving into a crisp, clean, and nicely dry finish.

Serving Suggestion

  • Temperature: Serve well-chilled at 9–11°C. A firm chill sharpens the wine's racy, high-spirited acidity and perfectly highlights its clean citrus flavors.
  • Decanting: No decanting required. This wine is built for immediate, vibrant pleasure right upon opening, and it is best enjoyed fresh over the next 2 to 4 years.
  • Western Pairing: Freshly shucked raw oysters, cold shrimp salad with avocado, grilled trout with lemon, or fresh goat cheese rounds.
  • Asian Pairing: Traditional crystal shrimp dumplings (蝦餃), salt-and-pepper calamari, or light sashimi plates.
