La Dent de Chien is Château de la Maltroye's high-altitude (250-300m) southwest-facing 1er Cru bordering Le Montrachet, featuring shallow limestone soils and old vines (planted 1935) that produce early-ripening Chardonnay of exceptional purity and finesse. Hand-harvested grapes undergo pneumatic pressing, barrel fermentation with indigenous yeasts, partial malolactic conversion, and 12-15 months aging in French oak (moderate new barrels), yielding structured Côte de Beaune whites at 13-13.5% alcohol.
Tasting Notes
Pale straw with green reflections; aromas of lemon zest, white peach, acacia flowers, wet flint, hawthorn, honeysuckle, verbena, hazelnut, and subtle lees character. Powerful yet tactile palate with pure minerality, sophisticated complexity, creamy texture, vibrant acidity, and a phenomenal, intensely mineral finish where stone triumphs.
Serving and Cellaring
Serve at 11-13°C in a Chardonnay glass. Drink from 2029-2045+ after minimum 5 years cellaring for full complexity; pairs with lobster, foie gras, scallops, or aged Comté cheese.
