Green Apple, Lemon Verbena, Crushed Chalk, and Chanterelles Energy

The 2024 Domaine Raymond Dupont-Fahn Bourgogne Aligoté "Les Chanterelles" is an electric, mineral-infused white showcasing the sheer tension of high-quality old-vine Aligoté. It delivers vivid aromas of green apple, lemon zest, white flowers, and flinty wet stone. Medium-bodied and mouth-watering, it cuts across the palate with racy, crystalline acidity and saline mineral precision, finishing remarkably clean, crisp, and refreshing.

Highlights

  • 100% Aligoté sourced from "Les Chanterelles," a dedicated parcel of old vines planted in limestone-dense clay soils around the Meursault and Auxey-Duresses periphery.
  • Planted with heritage Aligoté Doré clones rather than high-yielding Aligoté Vert, yielding smaller berries with enhanced concentration, aromatic depth, and natural acidity.
  • Crafted by Raymond Dupont-Fahn, applying his hallmark non-interventionist cellar philosophy to allow grape variety and limestone terroir to shine without heavy oak masking.
  • Matured primarily in stainless steel and seasoned older wood vessels to preserve pristine citrus purity, tensile freshness, and chiseled minerality.
  • From the classically styled, energetic 2024 harvest; offers exhilarating freshness and drinkability today alongside the acidity to remain vibrant through 2030+.

Tasting Notes

Pale straw with bright green reflections, it opens with an incisive, lifted bouquet of Granny Smith apples, lime peel, lemon verbena, and white blossom, grounded by wet river stones and crushed oyster shells. On the palate, it is light-to-medium-bodied, vibrant, and taut, driving pure orchard and citrus fruit across a spine of electric limestone acidity, concluding on a clean, mouth-watering, and distinctly saline finish.

Serving Suggestion

  • Temperature: Serve chilled at 8–10°C in standard white Burgundy or universal stemware.
  • Decanting: Best served straight from the bottle; pairs delightfully with fresh oysters, sashimi, gougères, grilled sardines, goat cheese salads, or jambon persillé. Optimal drinking window now through 2030+.
