From Domaine William Fèvre's 2.24ha across three key plots in Montée de Tonnerre—Chapelot (50%), Pied d'Aloup (25%), and Côte de Bréchain (25%, planted 1936)—on steep southwest-facing slopes with Portlandian and Kimmeridgian soils. Grapes are hand-harvested, direct-pressed, with 40-50% fermented in neutral French oak (average 6 years old) and balance in stainless steel; aged 12-14 months on fine lees (oak portion) for structure and texture, bottled at 13% alcohol emphasizing terroir transparency through organic viticulture.
Tasting Notes
Bright light lemon hue with a cool, pure nose of mineral reduction, citrus zest, floral notes, iodine, orchard fruit, and white flowers. Medium-bodied palate is sleek, refined, satiny, and delineated with crisp apple, pear, confit citrus, oatmeal, bracing salinity, racy acids, velvety texture, and a long, expansive, well-balanced finish showing stony minerality and subtle spice.
