Tasting Notes
- Appearance: Clear, bright straw yellow with shimmering pale-green reflections.
- Nose: Intensely fragrant and complex, opening with notes of ripe white peach, passionfruit, and Meyer lemon rind, layered beautifully over secondary aromas of wet flint, white flowers, lemongrass, and subtle warming spice.
- Palate: Strictly bone-dry, medium-to-full-bodied, and highly multi-layered. A rich, waxy entry of tropical and citrus fruits expands across the mid-palate, revealing a creamy, sophisticated texture. A vibrant, persistent line of mineral acidity provides immense focus, carrying the wine into a clean, long, and distinctly saline finish.
Serving Suggestion
- Temperature: Serve slightly chilled at 10–12°C. Avoid serving it ice-cold, as a slightly warmer temperature allows the complex, creamy texture and exotic aromatics to fully unfold.
- Decanting: A brief 15-to-20 minute decant is highly beneficial to allow the reductive mineral elements to open up. While incredibly compelling now, this white wine possesses a structure and depth that will evolve beautifully over the next 5–8 years.
