Electric Freshness, Stony Focus, and Grand Cru Altitude

The 2021 Domaine Hubert Lamy Saint-Aubin "En Remilly" 1er Cru is a brilliant, high-toned masterclass in cool-climate Chardonnay precision. Sitting on a steep, south-facing limestone slope just a stone's throw from Chevalier-Montrachet, this benchmark vineyard captures the vibrant, crisp energy of the 2021 vintage with exceptional purity. It leaps from the glass with lively aromas of fresh citrus peel, green apple, and white flowers, layered over a distinct reduction of crushed flint and sea spray. On the palate, it is light-to-medium-bodied yet remarkably deep, matching its juicy fruit intensity with a laser-sharp wave of rocky acidity that drives into a long, mouth-watering, and saline-flecked finish.

Terroir, History & Acclaim

Critical Recognition:
Burghound 93 pts
Jasper Morris 93 pts
  • 93 Points (Outstanding) - Burghound (Allen Meadows): A markedly floral nose of bright citrus confit, mineral reduction and discreet spice wisps leads to intense and vibrant medium weight flavors that are notably saline in character on the crisp, dry, moderately austere and linear finale. I very much like the balance and this solidly powerful effort should reward a decade plus of cellaring, which is just as well as it could use better depth. This too is excellent.
  • 93 Points ★★★★☆ - Jasper Morris Inside Burgundy: 10 barrels made instead of 50. Pure pale lemon yellow. Very stylish, quite backward, En Remilly rather likes the cooler year as it avoids the roasted stone character of the hotter vintages. Pure white fruit with almost a touch of sucrosity, and a lovely balanced aftertaste. Drink from 2027-2032. Tasted Nov 2023.
  • The Renowned En Remilly Slopes: Perched high on a steep, south-facing amphiteater slope above Puligny and Chassagne, *En Remilly* sits just around the corner from Chevalier-Montrachet. The soil here is paper-thin—often just 10 centimeters of topsoil over solid white limestone bedrock strewn with small pebbles. This extreme environment forces the roots deep into the rock, yielding grapes packed with incredible tension, piercing freshness, and intense mineral drive.
  • Olivier Lamy's Uncompromising Elevage: Widely considered one of the absolute master winemakers of the Côte de Beaune, Olivier Lamy treats this premier cru with obsessive care. In the cool, lower-yielding 2021 vintage, Lamy opted for zero new oak barrels, aging the wine in larger, neutral wood pieces and demi-muids across an extended two-year period. This gentle process preserves the raw, crystalline purity of the fruit without introducing woody tannins or distracting barrel toast.

Highlights

  • 100% Chardonnay estate-harvested from high-altitude, stony plots in the benchmark En Remilly premier cru site.
  • Crafted by Olivier Lamy, a visionary grower universally regarded as the gold standard for Saint-Aubin.
  • Earned matching 93-point scores from both Allen Meadows at Burghound and Jasper Morris at Inside Burgundy.

Tasting Notes

  • Appearance: Brilliant pale straw-gold with clear, shimmering watery-white flashes at the rim.
  • Nose: Intensely fresh, mineral, and high-toned. It opens with aromas of lemon zest, fresh green apple, and white acacia blossoms, anchored beneath by a sophisticated reduction of flinty smoke, sea salt, and crushed stones.
  • Palate: Bone-dry, light-to-medium-bodied, and beautifully linear. The attack delivers a crisp, penetrating core of citrus oil and tart white peach. An electric spine of limestone acidity drives cleanly through the mid-palate, leading into a long, mouth-watering, and saline-driven finish.

Serving Suggestion

  • Temperature: Serve slightly cool at 10–12°C. A fresh chill highlights the crisp citrus profile and emphasizes the wine's thirst-quenching, stony minerality.
  • Decanting: A brief 20-to-30 minute decant is recommended if opening young to allow the subtle flint reduction to uncoil. Cellar-worthy through 2035+.
  • Western Pairing: Pan-seared sea bass with lemon butter, fresh oysters on the half shell, grilled turbot, or roasted chicken with herbs.
  • Asian Pairing: Steamed scallops with garlic and glass noodles, wok-fried crystal shrimp dumplings (蝦餃), or delicate white-fish sashimi.
