Clos Michet is a parcel-based cuvée from a second pass through three clos parcels, with hand harvesting, gentle pneumatic pressing, spontaneous fermentation, and about 12 months of barrel aging on fine lees. The wine is built from mature vines over 50 years old, giving low yields and a focused, terroir-driven style.
Tasting Notes
Expect lemon confit, white flowers, quince, citrus peel, pear, peach, and apricot, plus a subtle smoky, flinty edge. The palate is tense yet rounded, with mineral freshness and a long, clean finish.
Serving and Cellaring
Serve at 10-12°C. Pair with seafood, roast poultry, creamy fish dishes, or goat cheese, and cellar a few years for added depth.
