Rémus is a multi-parcel cuvée from clay-limestone-siliceous soils over limestone mother rock, sourced from 50-80-year-old vines. The wine is organically farmed, fermented with ambient yeasts, and raised in barrel with no malolactic fermentation, giving it bright cut, subtle phenolics, and a clean, expressive profile.
Tasting Notes
Expect apple blossom, tart cooking apple, pineapple, smoky citrus, and a lightly phenolic grip. The palate is precise and energetic, with freshness, structure, and a long mineral-driven finish.
Serving and Cellaring
Serve at 10-12°C. Drink now for its youthful clarity or cellar a few years for extra depth; it pairs well with seafood, roast poultry, and creamy fish dishes.
