Ripe Pear, Toasted Brioche, Rocky Minerality, and Vibrant Tension

Crafted by rising star Jérémy Arnaud, this unique Chardonnay hails from a high-altitude parcel above Tonnerre. While he produces three expressions of this single vineyard, the "Bois" cuvée is carefully aged in older French oak. The barrel maturation adds a delicate layer of toasted brioche and textural roundness to the pristine white peach and pear fruit, yielding a mineral-driven Burgundy with serious depth and a clean, saline finish.

Highlights

  • 100% Chardonnay sourced from Les Veuillots, a high-altitude, south-facing family parcel situated above Tonnerre, just east of Chablis.
  • The site's rocky clay-limestone soils yield wines of distinct, crushed-stone minerality and bright, natural tension.
  • Jérémy Arnaud remarkably bottles three distinct expressions of this single plot. The "Bois" (wood) cuvée highlights the vineyard's depth through classical barrel élevage.
  • Farmed organically and vinified with minimal intervention: hand-harvested, spontaneously fermented with native yeasts, and bottled unfined and unfiltered to preserve absolute purity.
  • Aged patiently in mostly older François Frères oak barrels (1 to 5 years old), imparting a comforting textural roundness without masking the 2023 vintage's vibrant orchard fruit.

Tasting Notes

Pours a brilliant, pale golden-yellow. The nose is inviting and expressive, opening with notes of ripe pear, yellow plum, and white peach, elegantly framed by hints of toasted brioche, hawthorn, and crushed chalk. On the palate, it is medium-bodied and beautifully textured. The barrel aging provides a reassuring weight and density, seamlessly balanced by a clean, rocky mineral line and vibrant, mouth-watering acidity. The finish is long, spicy, and perfectly poised, delivering a fresh, saline elegance.

Serving Suggestion

  • Temperature: Serve at 10–12°C (50–54°F) in standard white Burgundy glasses to enhance both the fruit and the mineral edge.
  • Decanting: No decanting necessary; open just prior to serving. Pairs wonderfully with roast chicken, seared scallops, or a creamy Brie de Meaux. Enjoy now through 2029.
