Crisp Green Apple, White Flowers, Crushed Chalk, and Laser-Focused Purity

Crafted by rising star Jérémy Arnaud, this expression of his high-altitude Les Veuillots parcel is aged entirely in stainless steel. The "Inox" cuvée strips away all oak influence to reveal the absolute purity of the Tonnerre terroir. Brimming with crisp green apple, white flowers, and zesty citrus, it is a racy, crystalline Chardonnay driven by striking chalky minerality and vibrant, mouth-watering tension.

Highlights

  • 100% Chardonnay sourced from Les Veuillots, a high-altitude, south-facing family parcel situated in Tonnerre, just a short distance east of Chablis.
  • The vineyard's rocky clay-limestone soils impart a distinct crushed-chalk minerality and striking natural tension reminiscent of its famous neighbor.
  • Jérémy Arnaud bottles three distinct expressions of this single plot. The "Inox" (stainless steel) cuvée is designed to showcase the vineyard's raw energy and unadulterated terroir.
  • Farmed organically and crafted with minimal intervention: hand-harvested, spontaneously fermented with native yeasts, and bottled unfined and unfiltered to preserve absolute purity.
  • The 2023 vintage offers beautiful fruit ripeness that perfectly counterbalances the cuvée's naturally racy, crystalline acidity, making it highly expressive in its youth.

Tasting Notes

Pours a brilliant, pale lemon-green. The nose is laser-focused and energetic, leaping from the glass with crisp green apple, Meyer lemon zest, and white blossoms, layered over a profound core of wet stone and crushed chalk. On the palate, it is sleek, linear, and completely unadorned by oak. A piercing spine of citrus-driven acidity provides incredible drive and tension, leading to a long, bracingly saline, and mouth-watering finish.

Serving Suggestion

  • Temperature: Serve well-chilled at 8–10°C (46–50°F) in standard white wine glasses to accentuate its crisp, refreshing tension.
  • Decanting: No decanting needed; open right before serving. A perfect match for freshly shucked oysters, sea bream crudo, or a fresh goat cheese salad. Drink now through 2028.
