Crisp Green Apple, Oyster Shell, Electric Tension, and Crystalline Purity

Crafted by artisanal rising star Jérémy Arnaud, this riveting Chablis is sourced from the "Sous Le Parc" lieu-dit, situated in the commune of Viviers. Grown on classic Kimmeridgian limestone soils, it captures the absolute essence of traditional Chablis. Brimming with crisp green apple, lemon rind, and crushed oyster shell, it is a beautifully linear, energetic white Burgundy marked by an electric spine of acidity and a distinctly saline, mouth-watering finish.

Highlights

  • 100% Chardonnay sourced from the Sous Le Parc lieu-dit, a superb parcel located in the commune of Viviers.
  • Grown on Chablis's legendary Kimmeridgian clay-limestone soils, heavily laden with fossilized oyster shells (Exogyra virgula), which impart the wine's signature iodine and saline minerality.
  • Farmed organically with meticulous attention to detail by Jérémy Arnaud, championing a terroir-transparent and ecologically conscious approach.
  • Vinification is strictly low-intervention: spontaneously fermented with indigenous yeasts and aged patiently on its fine lees in stainless steel vats to preserve absolute freshness and linear tension.
  • The 2023 vintage offers beautiful fruit ripeness that perfectly counterbalances the cuvée's naturally racy, crystalline acidity, bottled unfined and unfiltered with minimal sulfur.

Tasting Notes

Pours a brilliant, pale lemon-green. The nose is laser-focused and energetic, leaping from the glass with crisp green apple, Meyer lemon zest, and white blossoms, layered over a profound core of crushed oyster shell and a distinct sea-breeze salinity. On the palate, it is sleek, linear, and completely unadorned by oak. A piercing spine of citrus-driven acidity provides incredible drive and tension, leading to a long, bracingly chalky, and mouth-watering finish.

Serving Suggestion

  • Temperature: Serve well-chilled at 8–10°C (46–50°F) in standard white wine glasses to accentuate its crisp, refreshing tension.
  • Decanting: No decanting needed; open right before serving. A perfect match for freshly shucked oysters, sea bream crudo, or a classic gougère. Drink now through 2029.
