Electric Citrus, White Flowers, Crushed Stone, and Steep-Slope Tension

Sourced from one of Chablis’ steepest left-bank Premier Crus, Jérémy Arnaud’s Vau de Vey "La Grande Chaume" is a masterclass in tension. Farmed with low intervention, this Chardonnay delivers electric acidity, striking Kimmeridgian minerality, and vivid notes of orchard fruit. Fermented with wild yeasts and aged carefully to preserve purity, it is a focused, high-wire Chablis from one of the region's most exciting rising stars.

Highlights

  • 100% Chardonnay sourced from "La Grande Chaume," a distinct lieu-dit within the steep, left-bank Premier Cru of Vau de Vey, near the village of Beine.
  • The vines are planted on dramatic slopes (up to 50% gradient) over classic Kimmeridgian limestone and clay marl, requiring meticulous manual farming and yielding intense, mineral-driven fruit.
  • Grapes are hand-harvested and gently whole-cluster pressed. Fermentation proceeds spontaneously with indigenous yeasts, emphasizing terroir transparency.
  • Élevage takes place on the fine lees primarily in stainless steel tanks (inox) with minimal intervention, avoiding new oak to preserve the site's laser-like precision. Bottled unfined and unfiltered.
  • The 2023 vintage offered excellent ripeness alongside Chablis' hallmark acidity, perfectly complementing Vau de Vey's cool, eastern exposure to create a wine of striking balance and energy.

Tasting Notes

The 2023 Vau de Vey "La Grande Chaume" pours a luminous, pale yellow-gold with a silvery rim. The nose is incredibly focused and tightly wound, offering sharp, crystalline aromas of green apple, lemon zest, white peach, and a profound, chalky oyster-shell minerality. On the palate, the wine is electric and linear. Zippy, laser-like acidity drives a core of vibrant orchard fruit, leading to a long, mouth-watering, and distinctly saline finish that practically buzzes with energy.

Serving Suggestion

  • Temperature: Serve at 50–54°F (10–12°C) in a standard white wine glass to emphasize its precision and mineral focus.
  • Decanting: A brief 30-minute aeration helps open the tightly wound aromatics. An exceptional pairing for fresh oysters, scallop carpaccio, or sole meunière. Built to evolve, drink 2026–2035+.
