Highlights
- 100% Chardonnay sourced from the highest and most stony part of the "Les Quarts" terroir in Pouilly-Vinzelles, characterized by clay and limestone with high red iron oxide content.
- A true micro-cuvée born from extreme late-harvesting (often deep into November) of highly concentrated, desiccated grapes heavily affected by botrytis cinerea (noble rot).
- Extraction is painstakingly slow, utilizing an old wooden Marmonnier press to gently coax out the dense, syrupy juice over many hours, yielding minimal liquid.
- Fermentation and élevage take place in small, older 57-liter oak barrels (quartauts) over a prolonged period (typically a year or more), resulting in roughly 300g/L of residual sugar.
- Farmed following certified organic and biodynamic (Demeter) principles by the Bret Brothers, and bottled exclusively in 37.5cl half-bottles due to its extreme rarity and concentration.
Tasting Notes
The 2012 Cuvée X-Taste pours a brilliant, deep amber-gold in the glass. The bouquet is intensely concentrated and decadent, bursting with opulent aromas of quince paste, dried figs, candied lemon peel, apricot preserves, and a distinct touch of botrytis spice. On the palate, it is a luscious, syrupy elixir of immense weight and viscosity. Despite the massive residual sugar, the wine never feels cloying, as a streak of bright, Mâconnais acidity slices through the core of candied fruit, leaving an elegant, fresh, and endlessly persistent finish.
Serving Suggestion
- Temperature: Serve well-chilled at 45–50°F (7–10°C) in a dessert wine or small white wine glass to focus the intense aromatics.
- Decanting: No decanting necessary. An extraordinary pairing for Roquefort or other pungent blue cheeses, foie gras, or fruit-based desserts like tarte Tatin. Given the high sugar and acid, this wine will age effortlessly for decades.
