Critical Recognition
- 90 Points - Jasper Morris MW: Another variation on La Bonnode! This version undergoes an 8-day carbonic maceration on the skins in small 5 hl tanks before quickly fermenting in barrel. Sporting a pale amber color, it offers skin-contact flavors reminiscent of dry Jurançon with a slight sherbet fizz, backed by classic Saint-Véran character. Nicely balanced with skin-derived tannins and moderate acidity. (Tasted Mar 2024)
Highlights
- 100% Chardonnay: Sourced from 'La Bonnode', a sheltered east-facing parcel at the foot of the Roche de Vergisson in the Mâconnais, bottled under Vin de France due to its unconventional style.
- Terroir: Grown on fossilized coral reef limestone and clay, lending an underlying mineral depth to the exotic fruit profile.
- Winemaking: A unique whole-cluster carbonic maceration in closed 5 hectoliter tanks for 8 to 9 days, bottled without added sulfur (the 'Zen' method).
- Elevage: After pressing, the active fermentation finishes quickly in older neutral oak barrels, integrating the texture without imparting wood flavors.
- Vintage Profile: The ripe 2022 vintage provided balanced fruit, clocking in at 13% ABV while maintaining the wine's characteristic zesty, natural energy.
Tasting Notes
Pouring a pale amber with a slight orange tint, this skin-contact Chardonnay immediately bursts with a zesty, unconventional nose. Aromas evoke a dry Jurançon or Petit Manseng, alongside a lively, almost sherbet-like aromatic lift. On the palate, the carbonic maceration introduces a distinct tannic grip and a savory, textural breadth, while the traditional crystalline fruit of Saint-Véran waits quietly in the background. The acidity is notably softer than a standard Mâconnais white, rounding out a beautifully balanced, highly expressive, and purely natural finish.
Serving Suggestion
- Temperature: Serve slightly chilled at 50-54°F (10-12°C) in a universal or white Burgundy glass to capture its expressive skin-contact aromatics.
- Decanting: Not strictly necessary, but 15-30 minutes of air can help blow off any slight carbonic reduction. Excellent with rich fish, soft cheeses, or pork, and best enjoyed early between 2024 and 2025.
