Critical Recognition
- 90 Points - Jasper Morris MW: Served last, given the vinification style with 10 days maceration on the skins. 13% with a light orange tint to the color. And, indeed, a touch of orange in the bouquet. Floral too, rose petals, very seductive. The fruit has a sweetness unlike the other Bonnode wines, though the finish is entirely dry. Bread yeast notes are integrated into the fruit salad. Some little red fruits as well, wild strawberry. When to drink a wine like this? Perhaps on its own as a wine of meditation. Drink from 2026-2029. (Tasted Jun 2025)
Highlights
- 100% Chardonnay: Sourced from the sheltered 'La Bonnode' parcel at the foot of the Roche de Vergisson, declassified to Vin de France due to its unconventional orange wine style.
- Terroir: Grown on fossilized coral reef limestone and clay, providing the mineral backbone that supports this highly textural cuvée.
- Winemaking: Crafted with a 10-day maceration on the skins, extracting color, delicate tannins, and unique aromatic precursors. Bottled with zero added sulfites (the 'Zen' method).
- Elevage: Fermented with indigenous yeasts and finished in neutral vessels to allow the bread yeast characteristics to integrate seamlessly with the fruit.
- Vintage Profile: The 2023 vintage (13% ABV) showcases a seductive, floral aromatic profile with an alluring perceived sweetness that quickly transitions to a brilliantly dry finish.
Tasting Notes
Pouring with a distinct, light orange tint, this avant-garde expression of Chardonnay opens with a highly seductive and floral bouquet. Aromas of rose petals and fresh orange zest rise from the glass, accompanied by unexpected hints of wild strawberry. On the palate, there is a deceiving initial impression of sweet fruit salad, but the wine quickly reveals an entirely dry, structured core. Savory bread yeast notes are perfectly integrated into the textural mid-palate, framed by gentle, skin-derived tannins and finishing with a meditative, lingering complexity.
Serving Suggestion
- Temperature: Serve slightly chilled at 50-54°F (10-12°C) in a universal or white Burgundy glass to allow the complex aromatics to fully unfold.
- Decanting: Not necessary, but allowing it to breathe in the glass enhances the floral notes. Excellent to enjoy on its own as a "wine of meditation" or paired with hard cheeses and cured meats. Best enjoyed between 2026 and 2029.
