From the southern Beaune Premier Cru sector bordering Pommard, Boucherottes features dense red clay and marl soils yielding lush, structured wines. Hand-harvested Pinot Noir undergoes triage, destemming and natural fermentation in passive oak vats, followed by racking for malolactic and extended aging (12-16 months) in oak barrels before assemblage and bottling.
