(Wine Advocate SCore 92-94) The 2014 Chassagne-Montrachet 1er Cru Les Caillerets has chalk, hazelnut and smoke on the well-defined, but tightly coiled nose. The palate is full of green apple and fresh pear on the entry, a little creaminess towards the texture with almond and white chocolate notes on the persistent finish. This is yet another outstanding Chassagne-Montrachet from Lucien le Moine.

Lucien le Moine is known for producing hand-crafted wines that are made with a minimalist approach. Never racking, no pumps, very low levels of SO2 and a heavy emphasis on working with the fine lees.

The natural CO2 from the malolactic is present even in bottle. In fact we are looking for this presence as it helps protecting the wine in the most natural way.
The CO2 protects the wine by closing it upon itself that is why ALL OUR WINES MUST BE DECANTED. With decanting CO2 will leave and the wine will show itself. If one has time decanting can be for a few hours, if not a few minutes: by pouring the wine into the decanter and moving it slowly allowing the gas to leave.
