100% free run juice, fermented with neutral yeast in stainless steel, 4 months on lees post fermentation

Appearance: Brilliant pale straw with green hues.

Aroma: Highly perfumed and delicate aromas of lemon blossom and kaffir lime leaf. Some talcy mineral notes add complexity.

Palate: Refined yet powerful. Concentrated around a core of fresh kaffir lime, lemon drop lollies. Spear-like acidity and a slightly talcy texture are markers of the region and season. A very long finish. Stunning.
