Muscular, Deeply Complex, and Strikingly Architectural

A fascinating and powerful expression of Chambolle-Musigny, the 2020 Domaine Sérafin Père & Fils Les Baudes Premier Cru defies the typical stereotype of the appellation being purely delicate. Situated directly below the legendary Grand Cru Bonnes-Mares, this site features a stony terroir that lends a firm, robust skeleton to the wine. The exceptional concentration of the 2020 vintage elevates this structural character, delivering an alluring nose of crushed red cherry, wild plum, and black pepper, wrapped in a unique sauvage quality and old-school oak spices. Medium-to-full-bodied and impressively broad, it carries a dense core of muscular fruit balanced by plentiful, firm-grained tannins and a long, bracingly mineral finish.

Terroir, History & Acclaim

Critical Recognition:
Burghound [4] pts
  • 91-93 Points Oustanding - Burghound (Allen Meadows): "Discreet though perceptible wood frames ripe fruit aromas that derive more from the red side of the spectrum along with pretty nuances of violet, anise and earth. There is a really lovely texture to the muscular and well-delineated flavors that possess very fine density while delivering serious impressive length on the overtly austere, robust and serious finale where a touch of mocha slowly becomes apparent. This powerful effort is outstanding though it too is presently very tightly wound."
  • The Shadow of Bonnes-Mares: The Premier Cru *Les Baudes* sits in a highly prestigious position at the northern end of Chambolle-Musigny, directly below the Grand Cru *Bonnes-Mares*. Sharing a similar slope and limestone-dominant soil profile, it naturally imparts a broader, more masculine, and structural core to the wine compared to the softer, fleshier crus on the southern side of the village.
  • The Sérafin Philosophy: Based in Gevrey-Chambertin, the Sérafin family applies their legendary, uncompromising signature to their Chambolle holdings. Known for their use of old vines, low yields, and an intensive maturation period of 15 months in 100% new French oak, their winemaking style emphasizes structure, extract, and monumental aging capacity, allowing the solar density of 2020 to be framed magnificently.

Highlights

  • 100% Pinot Noir sourced from ancient vines in the Premier Cru Les Baudes, located just beneath Bonnes-Mares.
  • Vinified in a traditional, highly structural style by the acclaimed Domaine Sérafin Père & Fils, utilizing 100% new French oak.
  • A beautifully built, age-worthy 2020 red Burgundy that trades Chambolle's classic lacy lightness for architectural power and broad-shouldered density.

Tasting Notes

  • Appearance: Deep, dense ruby-purple core with great opacity and a bright crimson rim.
  • Nose: Remarkably expressive and layered. It opens with concentrated fruit aromas of crushed red cherry and ripe blackberry, intricately woven with a sauvage character, black pepper, and toasted vanilla bean from the new oak.
  • Palate: Bone-dry, medium-to-full-bodied, and beautifully serious. The entry reveals a dense mid-palate of dark fruits that manages to combine its unusual richness with a bracing, vivid mineral freshness. Plentiful, fine-grained tannins build smoothly across the palate, ensuring a firm structure and carrying the fruit into a complex, highly persistent finish.

Serving Suggestion

  • Temperature: Serve at cellar temperature (15–16°C). Keeping it cool ensures the dense fruit remains precise and balances the powerful wood structure.
  • Decanting: A 1-to-2 hour decant is highly recommended. Given the natural muscle of Les Baudes and Sérafin's traditional wood management, this wine needs ample air to soften its edges. It possesses exceptional architectural bones built to cellar seamlessly through 2040+.
  • Western Pairing: Roasted duck with an earthy cherry reduction, roasted venison loin, slow-braised beef short ribs, or prime cuts of grilled rib-eye.
  • Asian Pairing: Peking Duck (北京烤鴨), slow-braised pork belly (東坡肉), or wok-fried black pepper beef medallions.
