Critical Recognition
- 91-93 Points - Jasper Morris MW: More in crimson, a less vivacious colour. This is an attractive wine with a strawberry profile, some finesse but I don’t really get the extra over and above the Gevrey Vieilles Vignes. Lower acidity too as the grapes ripened a little more fully in the walled Clos of their holding. Drink from 2030-2036. Tasted Nov 2024.
Highlights
- 100% Pinot Noir: Sourced from a compact 0.45-hectare parcel of vines over 50 years old. Sérafin uniquely owns the vines within the ancient walled "Clos" found inside the Les Corbeaux lieu-dit.
- Terroir: Located at the northwestern corner of the Premier Cru. The historic stone walls act as a sun trap, accelerating ripening and tempering the cool winds from the Combe de Lavaux.
- Winemaking: 100% destemmed and fermented with indigenous yeasts. Extraction is kept gentle, with punch-downs limited to the early stages of a 10-15 day maceration.
- Elevage: Aged for 18 months in 100% new French oak sourced from top coopers like François Frères, Chassin, and Seguin Moreau. The wine is left undisturbed on its lees without racking and bottled unfined and unfiltered.
- Vintage Profile: The 2023 vintage highlights the warmth of the walled Clos, trading high-toned acidity for a deeper crimson color and fully ripened, strawberry-driven finesse.
Tasting Notes
Pouring a slightly less vivacious but deep crimson hue, this vintage reflects its sheltered, fully ripe terroir. The bouquet is charming and fruit-forward, led by a distinct profile of crushed strawberries and sweet red berries framed by polished, high-quality oak. On the palate, the wine leans into supple finesse rather than sharp tension; the naturally lower acidity yields a rounded, accessible texture. It finishes with an elegant, gentle warmth, beautifully harmonized by fine-grained tannins.
Serving Suggestion
- Temperature: Serve at 58-60°F (14-16°C) in a large Burgundy balloon glass.
- Decanting: Decant for 1 hour to allow the 100% new oak to integrate seamlessly with the fruit. Perfect alongside roasted squab, pork tenderloin, or mild, earthy cheeses. Drink from 2030 to 2036.
