Sourced from old bushvine Semillon (blanc and gris clones) on alluvial granite soils in Swartland, hand-harvested grapes are whole-bunch pressed without SO2 additions, settled, then naturally fermented (alcoholic and malolactic) into new Austrian 500L barrels and old French oak. Racked post-fermentation to avoid reduction, matured briefly, and bottled unfiltered with minimal SO2 at 13.2% alcohol, 2.5 g/L RS, and 6.0 g/L TA.
Tasting Notes
Savoury gunflint, thyme, and lemongrass nose with lime, yellow apple, salted pistachio entry leading to meringue and nougat richness. Textured, pithy palate shows waxy lemon peel, chamomile, ripe pear layers with elegant focus and savoury length.
Serving and Cellaring
Serve at 10-12°C in a white Burgundy glass; drink 2026-2032. Pairs with seafood, white fish with herb crust, or goat cheese.
