From the iconic Jensen Vineyard planted in 1975 on Mt. Harlan's limestone-rich soils with low yields under one ton per acre, biodynamic farming and cool high-elevation climate yield concentrated fruit. Native yeast fermentation with gentle extraction preserves purity, followed by French oak aging (30-50% new) for 16-20 months to enhance structure and spice at 14.2% alcohol.
