Terroir & Winemaking Craft
- The Extreme Mt. Harlan Limestone Terroir: Perched high in the Gavilan Mountains east of Monterey Bay at an altitude of approximately 2,200 feet. Calera founder Josh Jensen sought out this isolated parcel specifically for its rare, natural limestone and decomposed granite bedrock. The high elevation provides warm sunlight tempered by cool ocean breezes and chilly nights, allowing Viognier to achieve opulent aromatic ripeness while preserving exceptional natural acidity rarely found in the varietal.
- Classic Calera Elevage: Fermented with indigenous yeasts and matured entirely in neutral French oak barriques on its fine lees. By avoiding new oak and blocking malolactic conversion, the winery emphasizes the grape's exotic floral and orchard aromatics while allowing the mineral tension of the limestone bedrock to drive the structure.

Tasting Notes
Bright straw-gold with shimmering green reflections, it opens with pure, exuberant aromas of ripe white peaches, apricots, and orange blossom, complemented by touches of crystallized ginger, lemon curd, and wet crushed limestone. The palate is medium-to-full-bodied, silky, and energetic, carrying lush stone fruit flavors over a refreshing spine of mountain acidity and chalky minerality, culminating in a dry, lingering, and delicately perfumed finish.
Serving Suggestion
- Temperature: Serve chilled at 10–12°C in standard white wine stems rather than overly chilled flutes to highlight its aromatic complexity.
- Decanting: Decanting is not necessary; 10 to 15 minutes of glass aeration allows its heady floral perfume and stone fruit core to unfurl. Best enjoyed through 2029.
