Castello di Ama Vin Santo 2016 (375ml) is a traditional Tuscan sweet wine from the La Casuccia vineyard in Chianti Classico, made from dried Malvasia Bianca and Trebbiano Toscano grapes. Brilliant amber‑gold in color, it balances apricot and dried fruit richness with lively acidity and moderate sweetness for an elegant, refined style.

This Vin Santo del Chianti Classico DOC is produced from a strict selection of Malvasia Bianca (65%) and Trebbiano Toscano (35%) grown on very rocky clay‑limestone soils at about 450 m in the La Casuccia vineyard. Grapes are hand‑harvested, then hung as garlands and dried in well‑ventilated, moisture‑free rooms until sugars concentrate to at least 350 g/L before gentle pressing. The highly concentrated must ferments and matures naturally in used 200‑L Allier French oak barriques for around five years, resulting in a sweet wine at 13.5% alcohol with 78.3 g/L residual sugar and notable extract, emphasizing freshness over heaviness in the Ama house style.

Tasting Notes

Brilliant amber‑hued yellow with golden nuances; aromatic profile of apricot and other dried fruits, with notes of orange peel, spice, mint, dried leaves and incense emerging with air. The palate is elegant and refined, showing good acid verve and moderate sugar, with well‑balanced alcohol and a long, harmonious finish suited both to contemplation and food pairing.

Serving and Cellaring

Serve slightly chilled at around 10–14 °C in a small white‑wine or dessert‑wine glass. It is ideal as a meditation wine, pairing well with traditional Tuscan biscotti, fruit‑based desserts, and ripe or blue cheeses, and can be enjoyed from release through at least 2028 while retaining its freshness and complexity.
