From Champagne Drappier in the Aube region of France’s Côte des Bar, the Coteaux Champenois Trop M'en Faut NV is a refined 100% Pinot Noir still red sourced from a single 1.5-hectare parcel on Kimmeridgian limestone soils, named for its steep, challenging slope. Hand-harvested grapes from select vintages undergo gentle destemming, fermentation in temperature-controlled stainless steel vats, and maturation in used French oak for 12 months to preserve fruit purity and enhance structure. Committed to low-intervention and organic practices, this rare still wine from a Champagne house yields a ruby red wine with vibrant intensity and graceful poise.

The nose reveals red cherry, raspberry, violet, and hints of chalk and forest floor.
