Soul of a Lion 2019 comes from Daou Mountain's high-elevation limestone-clay vineyards, where cool Pacific breezes and meticulous farming yield concentrated yet balanced Bordeaux varieties. Aged 22 months in 100% new French oak, it captures Daniel Daou's perfectionist vision of Paso Robles Cabernet with European-style freshness and structure. Opaque ruby in color, the wine balances savory depth with lifted aromatics, reflecting ideal 2019 conditions.

Tasting Notes

  • Nose: Dark savory cherry, chargrill, graphite, green pepper and rose petals atop cassis and blueberry.

  • Palate: Full-bodied with vivid red berry, plum explosion, fine acidity, velvety tannins, vanilla lift and exotic spicy layers.

  • Finish: Extended and persistent with sandalwood, blackberry, toasted espresso and dark cocoa.

Awards and Accolades
James Suckling awarded Daou Soul of a Lion 2019 100 points, describing it as "a full-bodied cabernet sauvignon with firmness and length. Very polished tannins. Chewy and solid... Sandalwood and blackberry on the finish." The Buyer called it "about as close to perfect as perfect can be, with tannins, acidity and fruit all in great balance," ranking it among Daou's top vintages.

Serving and Cellaring
Serve at 16–18°C after 1–2 hours decanting to resolve tannins and unfold aromatics. Pairs with prime rib, lamb rack, venison or aged cheeses; cellars beautifully through 2042, developing leather, tobacco and graphite complexity.
