Rich, Honeyed, and Freshly Balanced

This celebrated Australian dessert wine provides a highly consistent, traditional expression of Botrytis (noble rot) Semillon. Sourced from the Riverina region, it delivers a dense layer of apricot jam, wild honey, and citrus peel, shaped by careful French oak maturation. It is a full-bodied, sweet wine that retains an energetic line of acidity, keeping the rich finish clean and balanced.

Expert Tasting Notes & Estate Reputation

  • 96 Points – James Suckling: "A very inviting and rich nose of treacle tart, poached apples, baking spices and mangoes. The palate is full-bodied with focused acidity, giving notes of pear tart tatin, toffee apples and macadamia nuts. Exceptionally balanced and giving. Drink or hold. Screw cap."
  • A Pioneer of Australian Dessert Wine: Created by Darren De Bortoli in 1982, Noble One is internationally acknowledged as the wine that brought New World Botrytis styles into global focus, earning thousands of trophies and remaining a benchmark for the style.

Highlights

  • Crafted from 100% Semillon grapes infected with Botrytis Cinerea, naturally concentrating flavors and sugars on the vine.
  • Sourced from premium, low-yielding vineyards within the Riverina region of New South Wales, Australia.
  • Fermented and matured for 12 months in a combination of new and used French oak barriques, introducing subtle complexity and structure to the dense fruit profile.

Tasting Notes

  • Appearance: Deep, brilliant golden yellow.
  • Nose: Intensely fragrant with complex aromas of yellow apricot conserve, orange marmalade, nectarine, wild clover honey, and a touch of sweet vanillin oak.
  • Palate: Full-bodied, unctuous, and richly sweet. Layered flavors of dried orchard fruits, butterscotch, and citrus marmalade are well-balanced by a clean line of refreshing acidity that lengthens the sweet, nutty finish.

Serving Suggestion

  • Temperature: Serve well-chilled at 8–10°C to maximize freshness and balance the high sugar concentration.
  • Decanting: Not required. Due to the high sugar levels and balanced profile, an open bottle will store well under cork or screwcap in the refrigerator for several weeks. Highly suitable for long-term cellaring over 15+ years.
  • Western Pairing: A reliable partner for classic Roquefort or Stilton blue cheeses, fruit tarts, crème brûlée, or foie gras terrine.
  • Asian & Cantonese Pairing: The intense sweetness and clean acidity cut through deep, savory richness and match salted elements wonderfully. It pairs exceptionally well with 金牌脆皮乳豬 (Crispy Roasted Suckling Pig), 生煎鵝肝 (Pan-fried Foie Gras), or traditional 鹹蛋黃月餅 (Lotus Seed Paste Mooncake with Salted Egg Yolk).
