History
De Bortoli Wines, established in 1928 by Vittorio and Giuseppina De Bortoli in Bilbul, New South Wales, is one of Australia's oldest family-owned wineries. Italian immigrants, they began with a 55-acre farm, producing wines for local communities. Their son Deen expanded the business, and today, the third generation—Darren, Leanne, Kevin, and Victor—manages operations across four wineries in Riverina, Hunter Valley, Yarra Valley, and Rutherglen, plus vineyards in King Valley and Heathcote. The winery gained global acclaim with the 1982 Noble One Botrytis Semillon, created by Darren De Bortoli.

Viticulture Philosophy
De Bortoli cultivates vineyards across diverse Australian regions, focusing on site-specific varieties like Semillon, Chardonnay, Shiraz, and Cabernet Sauvignon. Certified under Sustainable Winegrowing Australia, the winery emphasizes environmental stewardship, using integrated pest management, composting winery waste, and recycling wastewater with potassium for irrigation. Their 17 TREES initiative, launched in 2008, has planted over 69,000 trees to offset carbon emissions, reflecting a commitment to sustainability and biodiversity.

Winemaking Techniques
De Bortoli blends tradition with innovation. Noble One Botrytis Semillon is crafted from botrytis-affected grapes, fermented without temperature control, and aged in minimal new oak to preserve fruit intensity. Reds like Yarra Valley Pinot Noir undergo small-batch fermentation in open fermenters with extended maceration, while whites like Chardonnay use stainless steel or oak for balance. The winery employs minimal sulfites and recycles winery byproducts, ensuring terroir-driven wines with purity and finesse.

De Bortoli's Noble One is Australia's benchmark sweet wine, earning over 200 trophies and 550 gold medals, including Best Botrytis Wine at the 1984 International Wine and Spirit Competition.
