En Barberon is made from Pinot Noir whose vine is about 48 years old. About 60% whole bunch fermentation giving an uplifted and vibrant aromatic to the wine.  This is followed by a 2 weeks skin maceration in wooden truncated cone vats.  Matured for another 12 months with 30% new barrels.
