From Domaine du Bouchot in France's Pouilly-Fumé appellation, the MCMLV 2023 is a refined 100% Sauvignon Blanc sourced from 70-year-old vines planted in 1955 on southeast-facing slopes of marl, calcareous, and Kimmeridgian soils that impart exceptional concentration and depth. Hand-harvested grapes from the balanced 2023 vintage undergo 24-48 hours of skin maceration to enhance texture and relief, followed by pressing without SO2, fermentation with indigenous yeasts, and aging in stainless steel tanks with minimal sulfur addition to preserve purity. Certified biodynamic since 2009 under winemaker Antoine Gouffier, this production yields a pale straw wine with green highlights and remarkable vibrancy.
Tasting Notes An elegant, textured white with ripe tropical fruit and flinty minerality, reflecting Pouilly-Fumé's Kimmeridgian terroir. The nose reveals ripe pineapple, gooseberry, light honeycomb, and hints of mild spice, sweet herbs, and gunflint. On the palate, it is medium-bodied and silky, with vibrant acidity, controlled balance, and flavors of passion fruit, clementine, and chalky salinity, leading to a long, zesty finish.
